We have been told that operators had a hard time creating the sandwiches like they made in NY. Soft, spongy breads just don’t hold up to the rigors of a real Italian hero.They simply don’t have the density and weight to absorb the sauce. This need created an entire business for A&M as our customers transplanted around the US. A&M products are hearth baked and denser than most other Italian breads available outside the NY\NJ market.
